Flea Finds!

Over the weekend we passed by a flea market with tons of vendors. It’s basically like I’ve just struck a gold mine in my opinion 😉 I found some gorgeous hand-made hair pieces to add to an up-do style. We’ll see if I can pull that style off. I also got some vintage feather earrings in the brightest blue. Crossing my fingers that my suitcases will be able to fit everything come this fall!

Last night for dinner I made an eggplant pasta, using the eggplant I bought yesterday at school. Along with my eggplant, I cut up some onions, garlic, peppers, and a can of tomatoes to add to my pasta. It was really tasty! Sadly we did not have cheese because I was hoping to make an Eggplant Parmesan – but there’s always next time!

And for a sweet treat after dinner, I warmed up my home-made apple turnover with a little vanilla icecream.

Definitely the perfect way to end my day! Today I had a run-in with the GYM. Not always my favorite place, but thank goodness my Ipod was charged to get me through my work-out! I made it a point to go work-out today since I’m dining out tonight with a few girls from work. The plan? Mexican Food! Needless to say I’m excited 🙂

Bring on the Accessories!

I bought a black & white scarf at a flea market over the weekend. I love that it instantly makes a pair of jeans & white top come together. Don’t you just love when a simple scarf or piece of jewelry is all you need to make a fashion statement? I love how accessories can create the entire ensemble, giving off a more polished look.

To jazz up a basic jeans and white tee, I paired it with my new black & white scarf….& then wallah! It’s not so boring anymore 🙂

Stephen cooked a healthy dinner tonight ~ cheesy chicken & veggies! (much needed after 2 nights of Mac n’ Cheese) This picture was taken just in time, as this was dish was soon devoured by yours truly! I love the fact that veggies can fill me up without giving me that “overly-stuffed full feeling“. I still have lots of fresh veggies in my fridge from my Vendor purchases from last week. So I’m hoping to make some more healthy dinners this week, stay tuned! And as always, stay dressed to dish!

 

Domestic Diva

This afternoon the GYM was calling my name especially after Home-made Mac n’ Cheese last night (not to mention we’re having leftovers tonight). So while leftovers were on the menu, I knew I would need a little something to eat after the gym. I’ve been wanting to make Bruschetta for a long time now…and I finally did it! We had all the ingredients in our kitchen so I figured I’d do some experimenting with what we had.

My Bruschetta mixture!

Bruschetta Recipe:

  • 1 Tomato diced
  • A sprinkle of Dried Chili Powder
  • 2 Tbs. of whole basil
  • A sprinkle of Garlic Salt
  • A few drops of Lime Juice
  • 2 Tsp Balsamic Dressing

I mixed all of my ingredients in a bowl and then heated it in the microwave for about 20 seconds. I immediately put it on thin slices of toasted french bread. Annnd Oh – my – goodness – this appetizer will definitely be making a repeat! Stephen and I finished it off in just a few minutes 🙂

Okay so why the “Domestic Diva” title you ask? Well I came home from work, taking off all my jewelry as usual and realized I love wearing them – so why not wear them while I cook? I first got the image of a 50’s housewife in my head as they often wore pearls while in the kitchen. But I came to the conclusion I feel more excited & happy to cook in my jewelry verses my usual t-shirt/shorts combo. Why? I don’t know…same reason some girls like cooking in their stilettos. So while I had planned on taking a picture holding my new Bruschetta Combo, the camera was just too far away from where we were currently devouring each slice….you gotta pick your battles 😉 So in an effort to show off my domestic diva side, what’s a better way to display those jewels than to hold up some leftover Mac n’ Cheese!

Besides our tubs of leftover Mac n' Cheese, I love my peacock earrings! We agreed on NO anniversary gifts after 2 previous Birthdays, but how can a girl say no to these? 🙂

And as promised, here’s my recipe!

Home-made Mac n’ Cheese:

  • 2 cups macaroni noodles
  • 1 & 3/4 cup milk
  • 1 cup shredded colby cheese
  • 1 cup shredded white cheddar cheese
  • 1 cup cooked broccoli
  • 1/4 cup sauteed diced onions
  • 2 tbs butter
  • 2 tbs flour
  • 1/2 cup cornflakes (you’ll see!)

After cooking my noodles, I set them aside in a strainer. In a pot on medium heat, I mixed my butter and flour. I added my milk and waited until it began to bubble from the heat before adding my cheese. I poured both cups of cheese in and let it sit in the pot, occasionally giving it a stir. Once it became thick and creamy, I added my noodles, broccoli, & onions. I used about 1/4 cup of the cornflakes, mashing them up in my hand before adding them to the mixture. This gives a nice crunch to the macaroni as if it were baked.

Before serving I mashed up the rest of the cornflakes on top of each dish. The nice warm crunch gives off a baked casserole “taste” to it. Perfect for people who have no desire (or willpower) to wait 25 more minutes for it to bake in the oven! Enjoy! 🙂

3 Years & Counting

Today is officially our 3 year Anniversary! Man how time flies. If someone had told me three years ago that I would not only be engaged but living & working in Thailand after college, I would have told them, “You are caraazyy!” But here I am 🙂 And I would not change a thing! To begin our celebration, we begin with breakfast, as all occasions should revolve around food 😉

In between running errands today, we ended up at the mall again…imagine that! There’s also a grocery store there so we picked up a few ingredients to cook a home-made Mac n’ Cheese for dinner. On a whim, we passed by the doors to the Hilton Hotel which sits above the 7 story mall. Out of curiosity, we decided to check it out. While wondering the halls we passed by the lobby elevators and I had to take a picture of the sparkles!

We ventured on and came to a restaurant that overlooked the beach. Upon seeing this view, we immediately decided to have a few anniversary cocktails to celebrate 🙂

The view was absolutely gorgeous, the cocktails didn’t hurt either 🙂 Fast forward a few hours, and it was time for dinner! I made a Home-made Mac n’ cheese dish for the first time. We decided good ol’ comfort food and champagne would be a nice way to celebrate. Keepin’ it classy 😉

I gotta say, I’m pretty proud of this dish – as it is the first time I had ever made a Home-made Mac n’ Cheese by myself. I’ll have the recipe up tomorrow! As for now, we’re enjoying another episode of Junior Master Chef Australia, we love it! These kids cook the most amazing dishes…I’m just glad I’m not competing with them!
