Your Royal Highness

By now billions of people across the world have seen the much anticipated wedding of the year! Lucky for us in Thailand, we did not have to get up at the crack of dawn to see the festivities – it was the perfect Friday night special. At school yesterday everyone was buzzing about the details – the hair, the dress, the service, the hats…so much speculation! We had a vote going around on how she’d wear her hair…I was correct in guessing half up half down!

I thought every part of it was gorgeous and breathtaking. Granted when I first saw her long lace sleeves – I was thinking she’s all covered up! But I thought she looked beautiful, elegant and it suited her (now to be) royal duchess in every way. My favorite parts? Kate making her grand debut for the first time in her dress, the carriage ride, the balcony kiss (although both pecks on the lips were entirely too quick for my liking!) and Kate’s reaction to the crowd as she said “Oh wow” overlooking the balcony.

It was definitely a royal day at school! Everyone was excited to get home in time to watch the festivities ~ I was starving and felt it royally appropriate to have a cucumber sandwich leading up to the wedding 🙂

I might as well wear a big  festive hat this weekend as I’m still gobbling up all wedding related news 🙂 So what did you think of the wedding?! And most importantly the dress! Have a great weekend ~ stay dressed to dish!

Pasta & Pepperonata

Last night’s dinner was a Pasta & Pepperonata. Okay fine…I just happened to see the recipe on the back of the bag of pasta before boiling the noodles. But it turned out we had all the ingredients so I was up for the challenge!

Along with my spiral noodles, the sauce consisted of tomatoes, veggies and some spicy seasonings.

Pasta & Veggie Mixture:

  • 1 large red pepper diced
  • l onion, sliced
  • 3 tbs olive oil
  • 1 clove garlic crushed
  • 1/2 cup broccoli
  • 1/4 tsp chili powder
  • 1 canned tomatoes, drained and chopped
  • 1 tbs tomato paste
  • 1/4 tsp salt

Along with these ingredients I added some crushed red pepper (chili) flakes for more of a kick. After mixing the pasta and noodles, I topped it with Parmesan cheese.

Keepin’ it healthy! It was very tasty, needless to say I left room for seconds. Stephen and I have been cooking dinner for the past week and we are excited to dine out tonight! Hope your ‘hump day’ is off to a good start! 🙂

Back to the Daily Grind

After a 2 week hiatus of ‘water throwing’ and Songkran celebrations…it was back to the daily grind today. Honestly when I say daily grind, the first thing that comes to mind is a hot cup of jo’ and the small cafe from my college hometown. And in hindsight, my daily grind was all I wanted when that alarm screamed at 6am this morning.

I’d like to think I don’t like Mondays. You have an entire week to count down until Friday, work to take care of, and still stressing over the fact it’s only just Monday. But today, things were looking up. I’d enjoyed my 2 week break, but I was happy to start fresh. Over break it was island cocktails, midnight snacks, and lazy days (minus the water throwing of course). I decided today to aim for healthier eating, more activity, and ultimately getting back into the flow of things. Not a diet – although I am one of the many who will splurge on cake Sunday night, claiming Monday begins ‘healthy eating’.

Lucky for me, vendors line the school corridor every Monday and I was more than happy to snatch a few veggies after school today. I survived the dreaded Monday back ~ I was over and out, school bag & veggies in hand. And then I hear it -“Miss Rachel, Miss Rachel”! I whirl around only to find chocolate cake in my face leftover from a student’s birthday party. It took me all of 2 seconds to grab a slice and with a huge smile say, “Aw thank you so much…and I was trying to be healthy”. I swear there’s a cake in that school everyday. I’m doomed!

I decided to save my chocolate cake for after dinner and enjoy the ripe apple slices I had just purchased for a healthy afternoon snack. Perfect with peanut butter 🙂

Deviled Eggs & Grilled Ham & Cheese Sandwich

Thanks to this recipe from the Food network, I made deviled eggs for the first time ever (scary thought). But they turned out better than expected. And instead of finding a mound of ham to cook for just the 2 of us, we decided grilled ham & cheese would be a nice substitute. Alright enough of this food filled post, I’m off to scour the latest wedding trends hittin’ the scene. Hope your Monday is off to a good start!

Stranded on Koh Larn Island!

Hi friends! Yesterday we took a day trip to Koh Larn Island ~ a 45 minute ferry ride off Pattaya’s coast. We have been wanting to make this trip for the past few months and decided it was finally time. Rest assured we are not stranded – but their was reason to worry! We were happy to wake up to a bright and sunny day…perfect weather for an island getaway. We left Pattaya’s dock early morning in hopes for a full day on Koh Larn.

The water was crystal clear here with green and blue hues overlapping. Just one thing – there’s no dock! We stopped about 100 yards off the shore and waited for alternate transportation. Slowly but surely another small boat made its way over. I’m not sure if I was myself but I was all the more excited to hop off our ferry and enjoy the small boat experience.

Only problem? People kept tilting the boat…making it very hard not to get wet! After gaining balance…we were set and ready to go!

And that’s when we saw it ~ the dark skies said it all. With a storm brewing in the distance, we gathered our stuff and headed to the closest little hut for cover.

As soon as we stepped inside for cover, the first hit of lightening struck followed by a bolt of thunder…and then there was downpour. Were we stranded?! They had already canceled our 4pm departure to get back to Pattaya. But almost as fast as it arrived, the storm disappeared and it was bright and sunny again.

It turned out to be a gorgeous afternoon. By late afternoon it was time to board the boats again and head back to Pattaya! It was definitely a successful and relaxing day on Koh Larn. Hope you’re enjoying your weekend!
