Juicy Grilled Burger

Having been in Thailand for over a month now, I have definitely had my fair share of thai cuisine. With so many unique seasonings and spices, my palette has endured a full range of delicious flavors. From hot & spicy, to sweet & savory, it is no wonder this authentic Asian cuisine has hit international status. However, sometimes a craving for comfort food will come calling my name. Here are a few yummy dishes that definitely hit the spot.

Simply mouth-watering ~ Within minutes this plate is empty!

What represents comfort food better than a good ol’ fashioned burger? Jealous that I did not order this, Stephen was nice enough to share a few bites…thank goodness!  Filled with bacon, white cheddar, and grilled mushrooms & onions, this burger has become a personal favorite.

I have not had a waffle in months and after tasting this one I may have to break that habit..perfect for breakfast or dessert!

Homemade Chicken Chili

I have to say I am most proud of this last dish. Stephen and I came up with this recipe Christmas Eve night…needless to say we have made it two more times since then…it is that good. With lots of yummy vegetables, different seasonings, and a spicy kick, this chili is perfect for those cold winter nights (Or in our case, even warm nights!).

Chicken Chili Recipe:

  • 1 can peeled tomatoes
  • 1 can kidney beans
  • 4 chicken breasts, diced and cooked
  • 1 red pepper & 1 green pepper, diced
  • 1 onion
  • 1/2 bottle Singha beer (or any beer)
  • 4 small chilis, chopped
  • Tsp of sugar and cinnamon
  • 3 garlic cloves, chopped

Saute your onion, garlic and chicken. Mix with all other ingredients in a large pot. *If you want to thicken your chili, drain your tomatoes and beans before hand, and add a little flour. Let your chili simmer on low heat for an hour or two. Serves 2-4 people.
